I dabbled in barbecue for years before I got my first proper grill with a lid and vents. It was a gamechanger; I could control the airflow (to make it hotter or cooler), and the lid transformed the grill into a sort-of oven, enabling slower cooks (rather than only fast grilling). No longer was I starting chicken in my indoor oven before finishing it over the coals – I could do the whole thing outside.
I found myself lighting the grill more and more, seeking that flavour that only comes with fire and smoke, but also relishing the fact it took me outside. Nowadays, I cook everything over fire, from fish and shellfish to vegetables, beans, meat, even desserts. Fire cooking feels both instinctive and exciting because no two cooks are ever the same. People tell me they find barbecuing scary, and I understand because I once felt like this, too. But with a few basic tips, such as “zoning” your barbecue, anyone can become a pro. I truly believe that by starting to barbecue we’re not learning a skill, but re-learning something we’ve forgotten.

Um incêndio de grandes proporções em um prédio residencial na cidade da Antuérpia, na Bélgica, deixou várias pessoas mortas e feridas nesta quarta-feira (1), segundo a polícia local. Há ao menos seis mortos, segundo a TV pública belga VRTNWS.

A polícia afirmou em seu site que os bombeiros foram chamados pouco antes das 5h (no horário de Brasília) para combater um “incêndio de grandes proporções” iniciado no térreo de um prédio residencial de 10 andares na região de Linkeroever, bairro no noroeste da cidade.
Havia muita fumaça saindo do prédio, que abriga mais de 200 pessoas, e uma grande operação conjunta entre bombeiros e policiais foi mobilizada para combater as chamas e para os trabalhos de resgate, segundo a polícia. O edifício foi evacuado.
"Nossas equipes continuam procurando possíveis vítimas no prédio de apartamentos. Infelizmente, já foram encontradas várias vítimas fatais. (...) Nossa equipe de resgate em altura também está presente para auxiliar nas evacuações", afirmou a polícia em atualização pouco após as 8h (de Brasília).

A polícia afirmou que diversas pessoas ficaram feridas, com diferentes níveis de gravidade, no entanto, não havia especificado exatamente o número de mortos nem de feridos até a última atualização desta reportagem.
Oficialmente, a polícia afirmou que estava se esforçando no resgate às vítimas antes de divulgar números de vítimas, porém fontes policiais afirmaram à VRTNWS que há ao menos seis mortos e "um grande número" de feridos.
Vídeos que circulam nas redes sociais mostram moradores desesperados na varanda em meio ao incêndio e alguns deles tentando escapar de seus apartamentos pelas janelas. Veja mais abaixo.
Diversas equipes do corpo de bombeiros de diferentes distritos estavam no local. “Pedimos aos moradores afetados pela fumaça que mantenham portas e janelas fechadas e, se necessário, desliguem a ventilação”, acrescentou a polícia.
A Antuérpia fica a cerca de 30 km ao norte de Bruxelas. A Bélgica tem registrado uma série de incêndios graves nas últimas semanas, incluindo um em um armazém na capital.

'Esperamos o resgate na varanda'
Um morador do prédio que foi resgatado pelos bombeiros contou à imprensa belga os momentos de terror vividos nesta quarta.
“Primeiro a eletricidade caiu; três minutos depois, recebemos o alarme de incêndio. A essa altura, já havia fumaça nos corredores”, disse Geert Dewulf, que mora no 10º andar, à emissora belga VRTNWS.
“Tentamos descer por conta própria, mas não conseguimos mais. Nos barricamos no apartamento e esperamos na varanda. Cerca de 10 minutos depois, o corpo de bombeiros veio nos resgatar pela varanda com a escada da viatura.”
